Q What
do you think about the increase in the
number of people suffering from diabetes?
A Some
of the rise in the number of diabetes
sufferers is caused by the type of food
people are consuming, but also the quantity
of food being eaten is a factor, which
is resulting in a growing proportion
of the population being diagnosed as
overweight and obese.
(Antony
has published over 30 books
full of delicious recipes, including
ones specifically for diabetes sufferers
and low fat cookbooks.)
Q As
patron of a number of food trusts, you
are concerned about where our food comes
from?
A The
key is sustainability – for example,
rather than throwing back perfectly
edible fish into the sea to avoid exceeding
their fishing quotas, a solution may
be for our fishermen to fish less often
but to keep and bring to market the
whole catch. This could help to
maintain our stocks of wild fish, which
tastes far better than farmed fish.
I am also concerned about ‘food
miles’ – how far food travels before
it reaches our plates.
Q How
do you spend Christmas Day?
A I
spend lunchtime cooking at my pub The
Greyhound near Henley-on-Thames for
around 100 people on Christmas Day and
then at home in the evening I spend
time with my wife Jay, the kids and the in-laws. Christmas
is a time for giving, family and community
spirit and I love seeing my customers
and children’s faces light up.

have we not seen you on TV much recently?
A That’s
a question for ITV! Seriously,
I have been on television but not in
the UK. I’ve been in the Middle
East and India – Indonesian food has
become very popular and you can find
me every week on the Good Food channel.
